Step-by-Step Instructions for Banh Mi Sandwich
  1. In a microwave-safe bowl, combine rice vinegar, water, and sugar. Microwave until boiling, about 1-2 minutes. Pour over sliced carrots and daikon in a jar; refrigerate for at least 30 minutes.
  2. Slice pork tenderloin lengthwise into thin pieces, then pound for tenderness. Blend shallots, lemongrass, fish sauce, oyster sauce, lime juice, maple syrup, ginger, garlic, sesame oil, and chili paste for marinade. Coat pork and marinate in the fridge for 4-8 hours.
  3. Preheat grill or skillet over high heat for about 5 minutes. Add marinated pork slices in batches, cooking each side for 1-2 minutes until browned and caramelized. Remove promptly to prevent overcooking.
  4. Slice baguettes open lengthwise and heat grill or oven to medium. Toast baguettes cut side down for about 1 minute until golden and crispy.
  5. Spread mayonnaise (and optional pâté) on toasted baguette. Layer with grilled pork, pickled carrots and daikon, cucumber slices, jalapeños, and cilantro. Ensure even distribution of ingredients.
