- In a small bowl, add ripe, fresh blueberries along with honey or simple syrup. Gently mash the blueberries for 1-2 minutes until juicy.
- Pour in the coconut milk and fresh lime juice to the muddled blueberries. Stir gently for 30 seconds until well blended.
- Transfer the mixture into a cocktail shaker or jar filled with ice cubes and shake vigorously for 10-15 seconds.
- Strain the mixture into a tall glass filled with fresh ice using a fine mesh strainer.
- Top off your drink with club soda, and give a light stir to combine.
- Garnish with extra blueberries, a slice of lime, and a sprig of mint.
