Method
 

Step-by-Step Instructions
  1. Combine chili powder, cumin, smoked paprika, and lime zest in a large bowl. Toss shrimp in the spice mixture until coated. Allow to marinate for at least 15 minutes.
  2. Preheat grill or stovetop grill pan over medium-high heat. Grill marinated shrimp for 2-3 minutes per side until opaque and slightly charred.
  3. In a separate bowl, combine coleslaw mix with mayonnaise and lime juice. Stir to coat evenly and let sit for 5-10 minutes.
  4. Warm corn tortillas on the grill for about 30 seconds on each side until soft. Can also be heated in a dry skillet.
  5. Assemble tacos by placing grilled shrimp on warm tortillas and topping with creamy coleslaw.
