Ingredients
  

For the Chicken Marinade
  • 1 whole chicken bone-in pieces preferred
  • 1 medium onion finely chopped
  • 2 cloves garlic minced or grated
  • 2 stalks escallion (green onion) chopped
  • 2 teaspoons fresh thyme or dry thyme if not available
  • 2 bay leaves optional
  • 1 tablespoon browning sauce to enhance color and flavor
  • 1 whole scotch bonnet pepper or habanero if preferred
  • to taste salt and black pepper
  • 1 tablespoon paprika or favorite seasoning blend
  • 1 teaspoon pimento seeds (allspice) or ground allspice
  • 1 tablespoon dark brown sugar or white sugar
For the Gravy
  • 2 cups low sodium chicken stock or regular stock
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 1/4 cup ketchup or tomato paste for deeper taste
  • 2 tablespoons soy sauce omit if avoiding soy
  • 2 tablespoons olive oil or any neutral oil for browning

Method
 

Directions
  1. Prep the chicken by washing it under cold running water, removing the skin and fat, and chopping into pieces.
  2. Marinate the chicken with onion, garlic, thyme, bay leaves, browning sauce, sugar, pimento seeds, paprika, salt, black pepper, scotch bonnet pepper, and bell peppers for at least an hour or overnight.
  3. Heat olive oil in a Dutch oven, brown the marinated chicken in batches for 5 to 10 minutes.
  4. Pour in chicken stock and any leftover marinade, bring to a boil, reduce heat, and simmer for 20 minutes.
  5. Add ketchup, lower heat, and cook uncovered for another 10 minutes.
