Baking Steps
- Preheat your oven to 425°F (220°C) with a 12-inch cast iron skillet inside.

- In a large bowl, whisk together 1 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper, and 1/2 cup cheese.

- In another bowl, whisk together 8 eggs, 3/4 cup milk, 1/4 cup chives, and 1/2 teaspoon mustard until smooth.

- Pour the egg mixture into the dry ingredients, stirring until just combined.

- Carefully remove the skillet from the oven, add 2 tablespoons of butter, and let it melt.

- Pour the batter into the hot skillet and bake for 15 minutes.

- After 15 minutes, top with the remaining 3/4 cup cheese and bake for another 10 minutes.

- Once baked, remove from the oven, slice, and garnish with chives and optional toppings.
