Method
 

Preparing the Bread
  1. In a medium bowl, combine lukewarm water, honey, and molasses. Stir until dissolved and let sit until bubbles form.
  2. In a large mixing bowl, whisk together white bread flour, whole wheat flour, sea salt, brown sugar, cocoa powder, and instant dry yeast.
  3. Pour the honey-molasses mixture into the dry ingredients and stir until a coarse dough forms.
  4. Add softened butter and knead the dough on a floured surface for 8-15 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover, and let rise in a warm place for 1-2 hours.
  6. Once risen, punch down the dough, shape into rolls, and place them on a floured surface.
  7. Cover the rolls and let them rise again for 40 minutes.
  8. Preheat oven to 350°F. Bake the rolls for 30-35 minutes until golden brown.
  9. Cool on a wire rack for 15 minutes before enjoying with butter.
