- Preheat your oven to the temperature specified on your frozen tater tots package, typically around 400°F (200°C). Spread the tater tots evenly on a baking sheet lined with parchment paper. Bake according to the package instructions until golden brown and crispy, usually about 20–25 minutes, stirring halfway for even crispiness.
- While the tater tots are baking, in a large skillet over medium heat, add your choice of ground beef, turkey, or plant-based alternative. Season with salt and pepper. Sauté for about 7–10 minutes, breaking it apart until no longer pink. Drain excess grease.
- In a large mixing bowl, combine the browned meat and slightly crushed crispy tater tots. Sprinkle in a generous amount of shredded cheddar and Monterey Jack cheese, mixing until everything is thoroughly coated.
- Warm your flour tortillas to make them pliable, either in a dry skillet over low heat for about 1 minute on each side or quickly microwave wrapped in a damp paper towel for about 20 seconds.
- Place a generous scoop of the filling mixture in the center of each warmed tortilla. Drizzle with chipotle sauce and add a dollop of sour cream. Fold the sides over the filling, then roll tightly from the bottom up.
- Transfer the assembled burritos seam-side down into a baking dish. If desired, sprinkle additional cheese on top. Bake in the oven for about 15–20 minutes or until cheese is melted and tops are bubbly.
