Step-by-Step Instructions

  2. Grease a 9x13-inch baking dish generously with olive oil or butter.

  4. In a large mixing bowl, combine sliced zucchini, sweet corn, and halved cherry tomatoes. Add sautéed onion and garlic, seasoning with oregano, salt, and black pepper.
  5. Spread the vegetable mixture evenly in your greased baking dish.
  6. Sprinkle shredded mozzarella cheese generously over the vegetable mixture.
  7. In a small bowl, mix together grated Parmesan cheese with panko breadcrumbs, then sprinkle over the mozzarella layer.
