Ingredients

Method
 

Preparation Steps
  1. In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
  2. Add ¼ cup of amaretto liqueur, ¼ cup of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed for 1-2 minutes until well combined.
  3. In a separate bowl, mix together 3 tablespoons of granulated sugar and 2 tablespoons of cherry preserves. Fold this into the mascarpone mixture.
  4. Gently fold in 1 cup of chopped fresh cherries into the mascarpone mixture.
  5. Create the dipping mixture by combining ¼ cup of amaretto and ¼ cup of cherry juice. Stir well.
  6. Dip each ladyfinger quickly into the amaretto-cherry mixture and arrange in the bottom of a 9x13 baking dish.
  7. Spread half of the mascarpone mixture over the dipped ladyfingers.
  8. Repeat the process with another layer of dipped ladyfingers and then spread the remaining mascarpone mixture on top.
  9. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  10. Dust the top with cocoa powder and optionally sprinkle with dark chocolate before serving.
