Preparation Steps
- In a large mixing bowl, combine 1 cup of mascarpone cheese and 1 cup of heavy cream. Beat on medium speed for 2-3 minutes until smooth and fluffy.
- Add ¼ cup of amaretto liqueur, ¼ cup of cherry juice, and 1 teaspoon of vanilla extract. Mix on low speed for 1-2 minutes until well combined.
- In a separate bowl, mix together 3 tablespoons of granulated sugar and 2 tablespoons of cherry preserves. Fold this into the mascarpone mixture.
- Gently fold in 1 cup of chopped fresh cherries into the mascarpone mixture.
- Create the dipping mixture by combining ¼ cup of amaretto and ¼ cup of cherry juice. Stir well.
- Dip each ladyfinger quickly into the amaretto-cherry mixture and arrange in the bottom of a 9x13 baking dish.
- Spread half of the mascarpone mixture over the dipped ladyfingers.
- Repeat the process with another layer of dipped ladyfingers and then spread the remaining mascarpone mixture on top.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Dust the top with cocoa powder and optionally sprinkle with dark chocolate before serving.
