Ingredients
  

Batter Ingredients
  • 2 cups All-Purpose Flour can substitute with gluten-free flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter can substitute with coconut oil
  • 1 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1/2 cup Milk can substitute with almond milk
Apple Mixture
  • 1/4 cup Light Brown Sugar
  • 1 teaspoon Ground Cinnamon
  • 1 Large Apple peeled, cored, and chopped
Topping and Glaze
  • 1/4 cup Brown Sugar Topping
  • 1/2 cup Confectioners' Sugar
  • 1 tablespoon Water

Method
 

Preparation Steps
  1. Preheat oven to 350°F (175°C) and grease an 8.5 x 4.5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat butter, sugar, and vanilla until light and fluffy.
  4. Add eggs, one at a time, mixing well after each addition.
  5. Gradually add half of the flour mixture, then the milk, then the rest of the flour mixture.
  6. In another bowl, combine chopped apple, brown sugar, and cinnamon.
  7. Pour half the batter into the loaf pan, top with half the apple mixture, then add remaining batter and apple mixture.
  8. Sprinkle brown sugar topping over the top.
  9. Bake for 45-55 minutes, until a toothpick comes out clean.
  10. Allow to cool in the pan for 15-20 minutes, then glaze and cool completely on a wire rack.
