Making the Pralines
- In a large, heavy-bottomed saucepan, combine brown sugar, heavy whipping cream, light corn syrup, and a pinch of fine sea salt. Stir gently over low heat until dissolved.
- Increase heat to medium-low, boil while stirring until reaching 236°F to 240°F.
- Remove from heat, stir in butter until melted and blended.
- Fold in pecans and vanilla extract, stirring until thickened.
- Drop spoonfuls onto parchment paper and let set at room temperature for about 30 minutes.
