Ingredients
  

Candy Base
  • 2 cups Brown Sugar firmly packed
  • 1 cup Heavy Whipping Cream can be substituted with half-and-half
  • 1 cup Light Corn Syrup prevents crystallization
  • 1 teaspoon Salt fine sea salt recommended
  • ½ stick Real Salted Butter 4 tablespoons, can use unsalted if necessary
Nuts
  • 3 cups Pecan Halves rough chopped
Flavor
  • 2 teaspoons Vanilla Extract pure vanilla recommended

Method
 

Making the Pralines
  1. In a large, heavy-bottomed saucepan, combine brown sugar, heavy whipping cream, light corn syrup, and a pinch of fine sea salt. Stir gently over low heat until dissolved.
  2. Increase heat to medium-low, boil while stirring until reaching 236°F to 240°F.
  3. Remove from heat, stir in butter until melted and blended.
  4. Fold in pecans and vanilla extract, stirring until thickened.
  5. Drop spoonfuls onto parchment paper and let set at room temperature for about 30 minutes.
