  • 1 cup All-Purpose Flour or gluten-free flour
  • 1/4 teaspoon Salt to balance sweetness

  • 1 teaspoon Vanilla Extract
  • 2 cups Shredded Sweetened Coconut can use unsweetened

Equipment

  • mixing bowl
  • 9×13-inch baking dish
  • spatula
  • wire rack
  • sharp knife

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish. In a mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Gradually blend in all-purpose flour and salt until crumbly. Press into the prepared baking dish and bake for 15-18 minutes, or until golden at the edges.
  2. While the crust is baking, beat the large eggs in a bowl until foamy. Add granulated sugar, vanilla extract, and a pinch of salt, mixing well. Sift in a bit of flour, then stir in the shredded sweetened coconut until combined.
  3. Once the crust is baked, remove it and pour the coconut mixture over the warm crust. Spread evenly and return to the oven for an additional 20-25 minutes, until the top is golden brown and the filling is set.
  4. Let the bars cool completely in the pan on a wire rack. Once cooled, use a sharp knife to slice into squares or rectangles for serving.
