  • 2 tablespoons Red Curry Paste adjust for spice level
  • 1 tablespoon Fish Sauce optional
  • 1 each Lime juice and zest
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/4 cup Fresh Cilantro Leaves for garnish
For the Rice
  • 1 cup Jasmine Rice
  • 1.5 cups Water

Method
 

Step-by-Step Instructions
  1. Gather all ingredients. Cut fish into chunks, mince garlic, and grate ginger.
  2. In a skillet, heat oil and sauté red curry paste, garlic, and ginger until fragrant.
  3. Add fish to the skillet and cook for 3-4 minutes until lightly flaked.
  4. Pour in coconut milk, lime juice/zest, salt, and pepper. Simmer for 10-15 minutes.
  5. Rinse jasmine rice and cook in boiling water until fluffy, 15-20 minutes.
  6. Serve curry over rice, garnish with cilantro and lime zest.
