Cooking Steps
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 finely chopped onion and sauté for about 5 minutes until translucent.
- Stir in 3 minced garlic cloves and 1 tablespoon of freshly grated ginger. Cook for 1 minute.
- Add 1 diced red bell pepper and sauté for 3-4 minutes until tender.
- Pour in 1 can of coconut milk and 3 cups of fish or chicken broth. Stir to combine and bring to a gentle simmer.
- Add the juice of 2 limes, 2 tablespoons of fish sauce, and 1 teaspoon of sugar. Season with salt and pepper.
- Add 1 pound of white fish fillets and simmer for 5-7 minutes until fish is opaque.
- Stir in a handful of freshly chopped cilantro and let it rest before serving.
- Ladle the soup into bowls and serve with lime wedges.
