Ingredients
  

For the Salad
  • 8 ounces Orecchiette Pasta Can substitute with fusilli or farfalle.
  • 1 cup Corn Kernels Fresh and sweet, use 1 cup of cooked corn from 2 ears.
  • 1 Red Bell Pepper Diced for even distribution.
  • 4 slices Bacon Can substitute with vegetarian bacon.
  • 1/4 cup Fresh Cilantro Can substitute with parsley.
  • Salt
  • Pepper
For the Creamy Dressing
  • 1/2 cup Basil Pesto Store-bought or homemade.
  • 1/2 cup Greek Yogurt Can substitute with sour cream or vegan yogurt.
  • 1/4 cup Mayonnaise Can substitute with extra Greek yogurt or vegan mayo.
  • 1 Lime Juice Best if freshly squeezed.

Method
 

Cooking Instructions
  1. Cook the orecchiette pasta according to the package instructions in salted water for about 9-11 minutes until al dente. Drain and rinse with cold water.
  2. In a medium bowl, combine basil pesto, Greek yogurt, mayonnaise, and lime juice. Whisk until smooth and creamy.
  3. Cook bacon in a skillet over medium heat for 6-8 minutes until crispy. Cool and crumble.
  4. In a bowl, combine cooled pasta, corn, red bell pepper, and crumbled bacon. Toss gently.
  5. Pour dressing over the salad mixture and fold until evenly coated. Adjust seasoning with salt and pepper.
  6. Garnish with chopped cilantro. Serve immediately or chill before serving.
