Ingredients
  

For the Filling
  • 1 cup crab meat fresh or canned works beautifully
  • 8 oz cream cheese use lactose-free for a low lactose option
  • 3 tbsp mayonnaise Greek yogurt can be a healthier substitute
  • 1 tbsp Dijon mustard yellow mustard can be swapped if desired
  • 1 tbsp lemon juice lime juice also works well as an alternative
  • 2 tbsp green onion chives are a lovely substitute for a different twist
  • 1 tsp garlic powder fresh garlic gives a stronger kick if you prefer
  • to taste salt
  • to taste pepper
For the Coating
  • 1 cup breadcrumbs opt for gluten-free breadcrumbs for a GF version
  • 1 large egg use a flax egg for a vegan alternative

Method
 

Preparation Steps
  1. In a medium bowl, blend together the crab meat and cream cheese until smooth. Add in the mayonnaise, Dijon mustard, and lemon juice, mixing well to create a creamy base.
  2. Fold in the chopped green onion, garlic powder, and season with salt and pepper to taste.
  3. Using your hands or a spoon, take small portions of the crab mixture and gently form them into balls or patties, about the size of a golf ball.
  4. Prepare your coating station by beating an egg in a shallow dish, then dip each crab ball into the egg and roll in breadcrumbs until completely covered.
  5. In a large frying pan, heat enough oil over medium-high heat to cover the bottom by about half an inch.
  6. Carefully place the shaped Crab Crunchies into the hot oil and fry for about 2-3 minutes on each side until golden brown and crispy.
  7. Once cooked, remove the Crab Crunchies from the oil and transfer them onto a plate lined with paper towels to drain.
  8. Serve the warm Crab Crunchies on a platter with your choice of dipping sauces.
