- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing it lightly.
- In a large bowl, whisk together one large egg, light brown sugar, granulated sugar, liquid-state coconut oil, sour cream, and vanilla extract until creamy.
- Gently stir in mashed ripe bananas until fully incorporated.
- In another bowl, sift together flour, baking powder, baking soda, and optional salt. Gradually mix into the wet ingredients until just combined.
- Pour about two-thirds of the batter into the prepared loaf pan, smoothing the top.
- In a separate bowl, blend cream cheese with additional sugar until smooth and creamy.
- Spread the cream cheese mixture evenly over the banana batter in the pan. Dollop remaining banana batter on top and smooth it out.
