- Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with butter or cooking spray.
- Slice the chicken breasts in half horizontally. Marinate with olive oil, garlic, Italian seasoning, salt, and pepper. Refrigerate for 15-30 minutes.
- In a skillet, heat olive oil and sauté the spinach for 2-3 minutes until wilted. Remove from heat.
- Beat the softened cream cheese until smooth, then fold in sautéed spinach and half the mozzarella cheese.
