Step-by-Step Instructions for Chicken and Spinach Casserole
  1. Preheat your oven to 400°F (200°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Slice the chicken breasts in half horizontally. Marinate with olive oil, garlic, Italian seasoning, salt, and pepper. Refrigerate for 15-30 minutes.
  3. In a skillet, heat olive oil and sauté the spinach for 2-3 minutes until wilted. Remove from heat.
  4. Beat the softened cream cheese until smooth, then fold in sautéed spinach and half the mozzarella cheese.
  5. Spread the marinated chicken in the baking dish. Layer the cream cheese mixture over the chicken, then top with remaining mozzarella cheese.
  6. Bake for 20-30 minutes until the internal temperature is 165°F (75°C) and the cheese is bubbling.
  7. Let the casserole cool for about 5 minutes before serving.
