Ingredients
  

For the Chicken and Sauce
  • 1 pound boneless, skinless chicken breasts consider using rotisserie chicken for quicker prep
  • 3 cups chicken broth vegetable broth can be used for a lighter option
  • 1 cup heavy cream substitute with half-and-half for a lighter version
For the Gnocchi and Veggies
  • 1 pound fresh gnocchi frozen gnocchi can work if fresh isn't available
  • 2 cups frozen mixed vegetables (peas, carrots, corn) any frozen vegetable mix can work for convenience
For the Aromatics and Seasoning
  • 1 medium onion can substitute with shallots for a milder taste
  • 2 cloves garlic if fresh isn't handy, garlic powder can suffice
  • 1 teaspoon dried thyme consider fresh thyme for a more vibrant flavor
  • 1 teaspoon dried rosemary it's optional if you don't have it on hand
  • to taste salt taste and adjust as needed
  • to taste pepper taste and adjust as needed
For Cooking
  • 2 tablespoons olive oil you can replace it with butter for added richness
For Garnish
  • to taste fresh parsley can also be swapped with chives or basil

Method
 

Cooking Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 pound of cubed boneless, skinless chicken breasts to the pot and sauté for 5-7 minutes.
  3. Stir in one chopped medium onion and 2 minced garlic cloves, cooking for another 2-3 minutes.
  4. Sprinkle in 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and a pinch of salt and pepper.
  5. Pour in 3 cups of chicken broth and 1 cup of heavy cream, stirring vigorously to combine.
  6. Add 2 cups of frozen mixed vegetables to the pot, stirring until well combined.
  7. Gently fold in 1 pound of fresh gnocchi into the mixture.
  8. Reduce the heat to low and let everything simmer for 10-12 minutes.
  9. Remove from heat and garnish your Gnocchi Chicken Pot Pie with freshly chopped parsley.
