Ingredients
  

For the Pasta
  • 8 oz Pasta (spaghetti, linguine, or fusilli)
For the Sauce
  • 1 cup Whole-Milk Ricotta Low-fat ricotta can be used for a lighter dish.
  • 1/2 cup Parmesan Cheese Nutritional yeast can be a dairy-free option.
  • 1 whole Lemon (zest and juice) Lime juice can be a substitute.
  • 2 tbsp Extra Virgin Olive Oil Avocado oil works well too.
  • 2 cloves Garlic Garlic powder can be used if fresh is not available.
  • to taste Salt
  • to taste Black Pepper
For the Greens
  • 3-4 cups Fresh Baby Spinach Can be substituted with kale or other leafy greens.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve a cup of pasta water before draining.
  2. In a mixing bowl, combine ricotta, olive oil, Parmesan cheese, and the zest and juice of the lemon. Mix until smooth, then season with salt and pepper to taste.
  3. In the last minute of cooking the pasta, add fresh baby spinach directly into the pot and stir until wilted.
  4. Drain pasta and spinach, return to pot, and stir in ricotta sauce and a splash of reserved pasta water until well combined.
  5. Serve immediately, garnished with extra Parmesan, a drizzle of olive oil, lemon juice, and optional red pepper flakes.
