Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
  2. Add the sliced sirloin steak, seasoning it with salt and pepper. Sear for 3-4 minutes until browned.
  3. In the same pot, add a chopped onion and a diced bell pepper. Sauté for about 5 minutes until softened.
  4. Stir in 3 cloves of minced garlic and cook for an additional minute. Then, pour in 4 cups of beef broth.
  5. Return the browned steak to the pot after the soup comes to a simmer, allow it to simmer for another 10 minutes.
  6. Lower the heat and stir in 8 ounces of cream cheese until melted, then pour in 1 cup of heavy cream.
  7. Add 1 cup of shredded provolone or mozzarella cheese, stirring until melted and creamy.
  8. Ladle the soup into bowls, garnishing with extra cheese, chopped parsley, or green onions as desired.
