  1. Press Tofu: Wrap firm or extra-firm tofu in several layers of paper towels and place a heavy object on top. Let it sit for 15 minutes to press out excess moisture.
  2. Prepare Tofu Cubes: Unwrap the tofu and slice it into bite-sized cubes, about an inch each for uniform cooking.
  3. Coat Tofu: Combine cornstarch and garlic powder in a bowl. Roll tofu cubes in the cornstarch mixture, then dip in panko breadcrumbs for an even coating.
  4. Bake Tofu: Preheat oven to 400°F (200°C). Arrange coated tofu cubes on a baking sheet and bake for 30-40 minutes, flipping halfway through.
  5. Make Sauce: In a bowl, whisk together vegan mayonnaise, Sriracha, white sugar, and salt until smooth.
