For the Sauce
  • 1 cup Greek Yogurt Can substitute with sour cream or dairy-free yogurt
  • 1 tablespoon Hot Sauce Adjust to taste

Method
 

Step‑by‑Step Instructions
  1. Make the Yogurt-Lime Sauce by whisking together Greek yogurt, lime juice, lime zest, hot sauce, and a pinch of salt until smooth. Refrigerate while preparing other components.
  2. Cook the Ground Beef in a large skillet over medium-high heat with oil, crumbling and searing until crispy, then break into medium pieces and continue cooking until caramelized.
  3. Add the Chile Blend to the beef and cook for about 30 seconds until fragrant. Stir in tomato paste, lime juice, and vinegar, adjusting seasonings to taste.
  4. Prepare the Cauliflower Rice in a separate skillet with garlic, sautéing for 15 seconds before adding cauliflower rice and cooking until tender. Finish with lime juice and cilantro.
  5. Assemble the Bowls by layering cauliflower rice, topping with ground beef, fresh veggies, and drizzling with yogurt-lime sauce. Serve with lime wedges.
