For the Beef Coating
  • 360 g Thin-cut Sirloin Steak or substitute with ribeye, flank, or skirt
  • 1 small Egg acts as a binder
  • 4 tbsp Cornflour for crispy coating
  • 0.25 tsp Salt
  • 0.25 tsp Black Pepper
  • 0.125 tsp White Pepper adjust to preference
For the Sauce
  • 4.5 tbsp Sunflower Oil divided
  • 1 medium Onion sliced
  • 1 Red Chili finely sliced
  • 1 tsp Minced Ginger
  • 3 cloves Minced Garlic
  • 2 tbsp Rice Vinegar
  • 3 tbsp Dark Soy Sauce
  • 2 tbsp Tomato Puree
  • 6 tbsp Caster Sugar
  • 2 tbsp Tomato Ketchup
  • 2 tbsp Sweet Chili Sauce

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the beef strips with the egg and ensure they are well coated. Gradually add in the cornflour, salt, black pepper, and white pepper, mixing until evenly covered.
  2. Heat 3 tablespoons of sunflower oil in a frying pan or wok over high heat. Fry the coated beef strips in batches for about 5-6 minutes until dark brown and crispy. Drain on kitchen paper.
  3. In the same pan, add the remaining oil and sauté the onion for 2 minutes. Add the chili, ginger, and garlic, sautéing for 30 seconds.
  4. Pour in the rice vinegar, dark soy sauce, tomato puree, caster sugar, tomato ketchup, and sweet chili sauce. Stir until bubbling for 2-3 minutes until the sauce thickens.
  5. Reintroduce the crispy beef into the pan, tossing with the sauce for another 1-2 minutes until heated through and well-glazed.
