Method
 

Step-by-Step Instructions
  1. Pat the cod fillets dry, check for bones, and set aside.
  2. Set up three shallow dishes for breading: one for flour mixture, one for egg wash, and one for panko breadcrumbs.
  3. Dredge each cod fillet in the flour, then dip in egg wash, and coat in breadcrumbs.
  4. Rest the breaded cod on a wire rack for 10-15 minutes.
  5. Combine tartar sauce ingredients in a bowl and refrigerate for 30 minutes.
  6. Heat vegetable oil in a large pot until it reaches 350-375°F.
  7. Carefully fry the cod fillets in batches for 3-4 minutes until golden brown.
  8. Drain fried cod on a wire rack lined with paper towels.
  9. Toast brioche buns until golden.
  10. Assemble the sandwich with tartar sauce, lettuce, and fried cod between the buns.
  11. Add optional toppings and serve immediately with lemon wedges.
