- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix the grated zucchini with salt and let it sit for about 10 minutes.
- After 10 minutes, squeeze out as much liquid as possible from the zucchini using a clean kitchen towel.
- In the same bowl, combine the drained zucchini with breadcrumbs, feta cheese, Parmesan cheese, egg, minced garlic, oregano, black pepper, and optional red pepper flakes. Mix everything together until cohesive.
- Form small tots (1-2 inches) and place them onto the prepared baking sheet, ensuring even spacing.
- Lightly spray or drizzle olive oil over the tops of the tots.
- Bake for 20-25 minutes, flipping halfway through for even browning. Remove when golden brown and firm.
- Let them cool slightly on the baking sheet before serving with tzatziki sauce or yogurt dip.
