Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the grated zucchini with salt and let it sit for about 10 minutes.
  3. After 10 minutes, squeeze out as much liquid as possible from the zucchini using a clean kitchen towel.
  4. In the same bowl, combine the drained zucchini with breadcrumbs, feta cheese, Parmesan cheese, egg, minced garlic, oregano, black pepper, and optional red pepper flakes. Mix everything together until cohesive.
  5. Form small tots (1-2 inches) and place them onto the prepared baking sheet, ensuring even spacing.
  6. Lightly spray or drizzle olive oil over the tops of the tots.
  7. Bake for 20-25 minutes, flipping halfway through for even browning. Remove when golden brown and firm.
  8. Let them cool slightly on the baking sheet before serving with tzatziki sauce or yogurt dip.
