  • 1 block Super firm tofu or extra firm tofu pressed for 15 minutes
  • 2 tablespoons Tamari or substitute with soy sauce or coconut aminos
  • 1 tablespoon Lemon juice or white wine vinegar
For the Coating
  • 1 cup Panko breadcrumbs avoid seasoned varieties
  • 1/4 cup Nutritional yeast can omit or replace with more breadcrumbs
  • 1 tablespoon Dried herbs (sage, thyme, rosemary) adjust based on preference
  • 1/4 cup Cornstarch or all-purpose flour
For the Wet Mixture
  • 1 cup Soy or Almond Milk plain and unsweetened
  • 1 tablespoon Vinegar (apple cider or white wine) essential for flavor
For Seasoning
  • 1 teaspoon Garlic powder adjust based on taste
  • 1 teaspoon Paprika smoked paprika for extra depth
  • 1 teaspoon Salt adjust based on dietary needs

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a lightly oiled baking sheet.

  2. Slice the tofu into slabs about 1/2 inch thick, marinating them in tamari and lemon juice for at least 10 minutes.

  3. Set up three bowls: cornstarch, milk mixed with vinegar, and a combination of panko breadcrumbs, nutritional yeast, herbs, garlic powder, paprika, and salt.

  4. Coat each tofu slab in cornstarch, then dip into the milk mixture, followed by pressing into the breadcrumb mixture.

  5. Arrange the tofu slabs on the baking sheet and spray lightly with oil. Bake for 15 minutes until golden underneath.
