For the Chicken
  • 2 lbs Boneless, Skinless Chicken Breasts Frozen chicken can be used but may require an adjustment in cooking time.
  • 2 tablespoons Olive Oil Essential for browning the chicken.
For the Seasoning
  • 2 tablespoons Cajun Seasoning Use a spicier blend for extra heat.
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
For the Vegetables
  • 1 cup Bell Pepper (any color)
  • 1 small Onion Can use yellow or white onion.
  • 2 cloves Garlic (minced)
For the Sauce
  • 1 can Canned Diced Tomatoes Including their juices.
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream Can substitute with coconut milk for dairy-free.
  • 1/2 cup Grated Parmesan Cheese Can swap for dairy-free cheese if needed.
For the Pasta
  • 8 oz Penne Pasta Feel free to substitute with your preferred pasta shape.
For Garnish
  • 2 tablespoons Fresh Parsley (chopped) For topping.

Method
 

Step-by-Step Instructions
  1. In a large bowl, drizzle boneless, skinless chicken breasts with olive oil. Generously season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the spices into the chicken thoroughly.
  2. Heat a skillet over medium heat and add a splash of olive oil. Add the seasoned chicken and brown it on each side for about 2–3 minutes until golden. Remove from skillet and set aside.
  3. In your slow cooker, lay the browned chicken at the bottom. Layer sliced bell peppers, chopped onion, and minced garlic over the chicken.
  4. Pour the canned diced tomatoes over the layered chicken and vegetables. Add chicken broth, scraping up browned bits left in the skillet.
  5. Cover the slow cooker and set it to cook on low for 4–5 hours or on high for 2–3 hours.
  6. When the cooking time is up, shred the chicken using two forks directly in the slow cooker and stir into the sauce.
  7. Pour heavy cream and grated Parmesan cheese into the slow cooker, stirring until fully melted and combined. Allow to simmer for about 10 minutes.
  8. Cook the penne pasta according to package instructions in a separate pot. Drain and set aside.
  9. Add the cooked penne pasta to the slow cooker and gently toss everything together, then let it warm through for 15-20 minutes.
  10. Dish out into bowls, garnishing with chopped fresh parsley.
