Method
 

Preparation Steps
  1. Gather all ingredients and chop chicken into bite-sized pieces. Shred the cheese and cut tortillas into strips if using gluten-free.
  2. Layer half of the tortilla strips in the slow cooker, followed by half of the chicken, enchilada sauce, and half of the cheese.
  3. Sprinkle beans over the cheese, then repeat layering with remaining tortillas, chicken, enchilada sauce, and cheese.
  4. Cover and cook on low heat for 5 hours.
  5. For optional crispy topping, transfer the top layer to an air fryer for 3-5 minutes until cheese is golden and bubbly.
  6. Serve warm, garnished with cilantro and sour cream.
