Ingredients
  

For the Vegetables
  • 2 tablespoons Olive Oil can substitute with canola or avocado oil
  • 1 medium Onion use shallots for milder flavor
  • 2 cups Zucchini squeeze out excess water
  • 1 cup Tomatoes Roma or cherry tomatoes are best
For the Filling
  • 4 Eggs large, fresh eggs
  • 1/2 cup Milk whole or 2%; plant-based for dairy-free
  • 1/4 cup Heavy Cream substitute with extra milk for lighter touch
  • 1 cup Shredded Mozzarella Cheese cheddar or Swiss can be used
  • 1/4 cup Grated Parmesan Cheese optional for added depth
For Flavor
  • 2 cloves Garlic optional
  • 1 teaspoon Dried Basil or fresh basil
  • 1 teaspoon Dried Oregano can substitute with other dried herbs
  • to taste Salt and Pepper essential seasoning
  • 1/4 teaspoon Red Pepper Flakes optional

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish with olive oil or cooking spray.
  2. In a skillet over medium heat, warm olive oil and sauté chopped onion for about 3 minutes.
  3. Add diced zucchini and minced garlic, cooking for an additional 5-6 minutes.
  4. In a mixing bowl, whisk together the eggs, milk, and heavy cream until smooth. Season with dried basil, oregano, salt, and pepper.
  5. Spread sautéed vegetables in the greased pie dish and layer with diced tomatoes.
  6. Sprinkle mozzarella and Parmesan cheese over the veggies.
  7. Pour the whisked egg mixture over the layered ingredients.
  8. Bake for 35-40 minutes until the top is set and lightly golden.
  9. Let cool for about 10 minutes before slicing and serving.
