For the Salad
  • 2 cups Strawberries Fresh and ripe
  • 2 cups Cucumbers English cucumbers preferred
  • 2 cups Watermelon Cubed
  • 1/4 cup Red Onion Finely chopped, soak to mellow flavor
  • 1/4 cup Fresh Mint Chopped
For the Dressing
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper Freshly ground
  • 2 tablespoons Lime Juice Freshly squeezed
  • 2 tablespoons Olive Oil Extra virgin preferred

Method
 

Preparation Steps
  1. Wash and dry the strawberries, cucumbers, and watermelon. Hull the strawberries and slice them into halves or quarters. Cut the cucumbers into thin rounds or half-moons, and cube the watermelon.
  2. In a large serving bowl, combine the strawberries, cucumbers, and watermelon.
  3. Finely chop the red onion and mint. If desired, soak the onion in cold water for 10 minutes, then drain. Add to the bowl with the fruits and cucumbers.
  4. Sprinkle salt and pepper over the salad. Drizzle with lime juice and olive oil, and gently mix to coat all the ingredients.
  5. Taste and adjust seasoning. Serve immediately or chill for 30 minutes.
