Method
 

Preparation
  1. Wash the cucumbers thoroughly and slice them into rounds or half-moons about 1/4 inch thick.
  2. In a large mixing bowl, combine the sliced cucumbers, chopped peanuts, green onions, and red pepper flakes.
  3. In a separate bowl, whisk together the peanut butter, maple syrup, soy sauce, Sriracha, rice vinegar, and sesame oil until smooth.
  4. Pour the dressing over the cucumber mixture and gently toss to coat well.
  5. Transfer to a serving dish and garnish with extra sesame seeds and chopped green onions. Let it chill in the fridge for about 20 minutes before serving.
