Step-by-Step Instructions for Brownie Petit Fours
  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. Combine semisweet chocolate and unsalted butter in a heatproof bowl over simmering water until melted and smooth.
  3. Whisk granulated sugar, light brown sugar, eggs, and vanilla into the melted mixture until combined.
  4. Sift all-purpose flour, cocoa powder, and salt into the wet mixture and fold until just combined.
  5. Pour the brownie batter into the prepared pan and bake for 20-25 minutes until a toothpick comes out with moist crumbs.
  6. Cool the brownies completely in the pan on a wire rack for about 30 minutes.
  7. Heat the heavy whipping cream in a small saucepan until simmering, then pour over chopped chocolate and stir until smooth for ganache.
  8. Dip each brownie square into the ganache and allow excess to drip off before placing on a wire rack.
  9. Sprinkle fleur de sel over each dipped petit four while ganache is still soft.
