Ingredients

For the Cake
  • 2 cups All-purpose flour Can substitute with gluten-free flour 1:1
  • 1.5 cups Sugar Adjust down to 1.25 cups for a less sweet cake
  • 0.75 cups Cocoa powder Use Dutch-processed cocoa for deeper notes
  • 1.5 teaspoons Baking powder Ensure freshness for optimal results
  • 1.5 teaspoons Baking soda Balances the acidity of the cocoa
  • 1 teaspoon Salt Using fine sea salt allows for better integration
  • 1 cup Milk Can substitute with almond or oat milk for a dairy-free version
  • 0.5 cups Oil Butter can be used but will yield a denser cake
  • 2 large Eggs Flax seed 'egg' can replace eggs for an egg-free version
  • 2 teaspoons Vanilla extract Opt for pure vanilla extract for the best taste
  • 1 cup Boiling water Can be swapped with hot coffee for enhanced chocolate taste
For the Frosting
  • 0.5 cups Butter Should be softened but not melted before use
  • 2 cups Powdered sugar Sift before using to avoid lumps

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by lining the bottoms with parchment paper and lightly greasing the sides.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, oil, eggs, and vanilla extract to the dry ingredients. Stir until the mixture is smooth.
  4. Gradually pour in the boiling water while stirring continuously to activate the cocoa powder.
  5. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes.
  6. Remove the pans from the oven and let them cool in the pans for about 10 minutes before transferring to cooling racks.
  7. Beat together the softened butter, cocoa powder, powdered sugar, vanilla extract, and milk for the frosting.
  8. Once cooled, frost the top of one layer with chocolate frosting, place the second layer on top, and frost the top and sides.
