Step-by-Step Instructions for Chocolate Cheesecake Bars
  1. Begin by preheating your oven to 325°F (163°C) and prepare a 9x9-inch square pan with nonstick spray and parchment paper.
  2. Blend 2 cups of Oreo cookies into fine crumbs and mix with 4 tablespoons of melted unsalted butter. Press this mixture into the bottom of the pan and bake for 12 minutes.
  3. Melt the 8 oz bar of Lindt chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  4. Blend 24 oz of softened cream cheese, 1 cup of sugar, and 0.5 cup of cocoa powder on high speed for 2 minutes. Pour in melted chocolate, 0.5 cup of heavy cream, and 1 tsp of vanilla; mix until smooth.
  5. Add 4 large eggs and blend on low speed until just combined. Pour filling over the baked crust.
  6. Bake for 40 to 50 minutes, allowing the center to jiggle slightly. Cool gradually for 20 minutes with the oven door cracked.
  7. Let the bars cool to room temperature, then cover and refrigerate for at least 6 hours.
  8. Heat 0.5 cup of heavy cream for the ganache until steaming, pour over 1 cup of chocolate chips, and stir until smooth.
