  1. Preheat your oven to 350°F (175°C) and prepare a 13x9-inch baking pan by lightly coating it with nonstick spray or lining it with foil.
  2. Combine graham cracker crumbs, sugar, and cinnamon in a mixing bowl. Melt butter and stir it into the crumb mixture. Press it evenly into the prepared baking pan and bake for 10 minutes, then let it cool completely.
  3. In a food processor, blend cream cheese and sugar until creamy. Gradually add dulce de leche, then add eggs one at a time, blending well after each addition. Finish with vanilla extract.
  4. Spread the cream cheese filling over the cooled crust and bake for about 38 minutes. The center should puff slightly and be firm but not fully set. Let it cool completely.
  5. In a microwave-safe bowl, add dulce de leche and heavy cream. Microwave in 20-second intervals, stirring until melted and smooth.
  6. Pour the melted dulce de leche topping over the cheesecake and spread evenly. Let it sit at room temperature for a few minutes, then chill in the refrigerator for at least one hour.
