  • cup cornstarch 42g
  • ½ teaspoon salt
  • 2 ½ cups whole milk 600ml
  • 1 ¾ cups heavy cream 400ml
  • 7 oz dark chocolate 200g, chopped
For the Tart Base
  • 1 cup all-purpose flour 120g
  • cup icing sugar 35g
  • ¼ cup cocoa powder 25g
  • ¼ teaspoon salt
  • 1 stick butter 114g, melted
  • ½ teaspoon vanilla extract
For Garnish
  • 1 tablespoon jam for brushing on top

Step-by-Step Instructions
  1. In a mixing bowl, combine all-purpose flour, icing sugar, cocoa powder, and salt. Mix in melted butter and vanilla extract until a dough forms. Press into a tart pan and chill for at least 30 minutes.
  2. In a separate bowl, whisk together egg yolks, whole eggs, sugar, cornstarch, and salt until pale and well combined. Heat milk and cream in a saucepan until just boiling, then gradually pour over the egg mixture while whisking continuously.
  3. Stir in chopped dark chocolate into the warm custard until fully melted and smooth.
  4. Preheat oven to 350°F (175°C). Pour chocolate custard into the prepared tart crust. Bake for 45-50 minutes, until edges are set with a slight jiggle in the center.
  5. Allow the flan to cool at room temperature for about 30 minutes. Brush the top with jam and refrigerate for at least 2 hours to set.
