- Preheat your oven to 350°F (175°C) and grease three round cake pans with butter or non-stick spray, then lightly flour them.
- In a large mixing bowl, combine white cake mix, three room temperature eggs, buttermilk, and vegetable oil. Beat for about 2 minutes until smooth.
- Gently fold in shredded coconut and chopped toasted pecans using a spatula.
- Divide the batter among the cake pans and bake for 15-17 minutes, or until a toothpick comes out clean.
- Cool the cake layers in the pans for about 10 minutes, then invert onto wire racks.
- Optionally, brush the tops of cooled layers with rum for added moisture.
- For the frosting, beat cream cheese and softened butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
- Assemble the cake by spreading frosting between layers and over the top and sides.
- Sprinkle chopped toasted pecans on top and chill in the refrigerator for at least 2 hours before serving.
