- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper.
- In a large mixing bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth.
- Add the almond flour, baking powder, cinnamon, salt, and grated carrots to the wet mixture and stir gently.
- Pour the batter into the prepared baking dish, smoothing the top evenly.
