  • 2 tablespoons Olive Oil Avocado oil can be substituted.
  • 2 tablespoons Lemon Juice Use fresh for the best taste.
  • 2 tablespoons Tomato Paste Red pepper paste can be used as an alternative.
  • 3 cloves Garlic Grated or minced; fresh is preferred.
  • 1 teaspoon Paprika Smoked paprika adds a different twist.
  • 1 teaspoon Ground Cumin Optional, but enhances flavor.
  • 1 teaspoon Dried Oregano Dried thyme can be substituted.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Ground Black Pepper Freshly cracked is recommended.
For the Chicken
  • 1 pound Boneless Skinless Chicken Breasts/Thighs Thighs are more flavorful.

Step-by-Step Instructions
  1. Prepare the Marinade: Combine yogurt, olive oil, lemon juice, tomato paste, garlic, paprika, cumin, oregano, salt, and black pepper in a bowl. Whisk until smooth.
  2. Marinate the Chicken: Cut chicken into bite-sized pieces, add to marinade, stir to coat, cover, and refrigerate for at least 20 minutes.
  3. Thread the Chicken onto Skewers: Pre-soak skewers in water for 30 minutes if wooden. Thread marinated chicken onto skewers.
  4. Preheat the Grill: Heat your grill to medium-high (375°F to 400°F). Oil the grates.
  5. Grill the Skewers: Place skewers on grill, close lid, and grill for 2-5 minutes per side until cooked through.
  6. Rest and Serve: Remove skewers, let rest for 5 minutes, then serve with tabbouleh or garlic sauce.
