For the Shells
  • 12 pieces jumbo pasta shells
For the Filling
  • 15 oz ricotta cheese full-fat for best flavor
  • 8 oz mozzarella cheese reserve some for topping
  • 1/2 cup Parmesan cheese
  • 2 cups fresh spinach can use frozen if drained well
  • 2-3 cloves garlic minced
  • 1/4 teaspoon nutmeg optional
For the Marinara Sauce
  • 24 oz marinara sauce jarred or homemade
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For Garnish
  • 1/4 cup fresh basil or parsley for presentation

Method
 

Cooking Instructions
  1. Preheat your oven to 190°C (375°F) and lightly grease a baking dish.
  2. Cook the jumbo shells in boiling salted water for 9-11 minutes until al dente, then drain and rinse with cold water.
  3. In a skillet, sauté minced garlic in olive oil for 1 minute, then add fresh spinach and cook until wilted. Remove from heat and mix with ricotta, mozzarella, Parmesan, and nutmeg.
  4. Spread some marinara sauce in the baking dish, fill each shell with the filling, arrange in the dish, and pour remaining sauce on top. Sprinkle with mozzarella.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until the cheese is melted and golden.
  6. Let sit for 5 minutes before serving, garnished with fresh basil or parsley.
