  • 1 medium Yellow Onion diced
  • 1 medium Green Bell Pepper chopped
  • 2 cups Brown Rice pre-cooked
  • 1 cup Dairy-Free Jack Cheese or nutritional yeast
  • 1 teaspoon Sea Salt adjust to taste
  • 1/2 teaspoon Pepper freshly cracked
Optional Toppings
  • 1/2 cup Breadcrumbs gluten-free if needed
  • to taste Fresh Herbs like parsley or chives

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9" x 9" baking dish with olive oil.
  2. Steam the broccoli florets for about 10 minutes until vibrant green and slightly firm. Set aside.
  3. In a skillet, heat olive oil over medium heat, add onion and bell pepper, cooking for 10-15 minutes until softened.
  4. Mix steamed broccoli, brown rice, dairy-free jack cheese, sea salt, and pepper in the skillet.
  5. Transfer the mixture to the baking dish and bake uncovered for 20 minutes until heated through and cheese is melty.
