- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate one medium zucchini, squeeze out excess moisture and set aside.
- In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of garlic powder (if using). Whisk until evenly distributed.
- Add the prepared zucchini, 1 cup of shredded mozzarella cheese, ¼ cup of grated Parmesan cheese, 1 large egg, and 2 tablespoons of olive oil. Stir until well combined.
- Dust a clean surface with flour and knead the dough for about 1 minute until cohesive. Roll out into a rectangle about ½ inch thick.
- Slice the dough into strips ½ to ¾ inch wide and place them on the lined baking sheet.
- Bake for 15–18 minutes until golden color and puffed. Remove and cool for about 5 minutes.
- Serve warm with marinara sauce or your favorite dipping sauces.
