  • 1 cup Mozzarella Cheese Shredded
  • ¼ cup Parmesan Cheese Grated
  • 1 large Egg For an egg-free alternative, mix 1 tbsp flaxseed meal with 2.5 tbsp water
  • 2 tablespoons Olive Oil
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder Optional, adjust to taste
  • 1 tablespoon Dried Italian Seasoning Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate one medium zucchini, squeeze out excess moisture and set aside.
  3. In a mixing bowl, combine 1 cup of all-purpose flour, 1 tablespoon of baking powder, 1 teaspoon of salt, and 1 teaspoon of garlic powder (if using). Whisk until evenly distributed.
  4. Add the prepared zucchini, 1 cup of shredded mozzarella cheese, ¼ cup of grated Parmesan cheese, 1 large egg, and 2 tablespoons of olive oil. Stir until well combined.
  5. Dust a clean surface with flour and knead the dough for about 1 minute until cohesive. Roll out into a rectangle about ½ inch thick.
  6. Slice the dough into strips ½ to ¾ inch wide and place them on the lined baking sheet.
  7. Bake for 15–18 minutes until golden color and puffed. Remove and cool for about 5 minutes.
  8. Serve warm with marinara sauce or your favorite dipping sauces.
