- Preheat your oven to 400°F (200°C).
- Wash and peel the pears, then slice them in half lengthwise. Remove the cores and arrange them face down in a baking dish.
- In a microwave-safe bowl, combine honey, melted coconut oil or unsalted butter, cinnamon, and vanilla extract. Microwave for about 30 seconds until melted, then stir well.
- Drizzle the honey mixture evenly over the pear halves, spreading sauce as needed.
- Bake the pears for 30 minutes, checking after 25 minutes for doneness. They should be soft and golden.
- Remove from the oven and let cool for about 5 minutes. Drizzle any leftover honey sauce over the pears before serving.
- Serve warm, either on their own or with a scoop of ice cream or Greek yogurt.
