  • 1/4 cup Cornstarch/corn flour Acts as a thickening agent.
  • 1/2 cup Lemon juice About 2 large lemons.
  • 2 teaspoons Lemon zest Provides zesty flavor.
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Turmeric Adds natural yellow hue.
  • 1/4 teaspoon Salt Optional, but balances sweetness.
For Topping (Optional)
  • 1 cup Whipped dairy-free cream For serving.
  • 1 cup Fresh berries For decoration and added flavor.

Method
 

Prepare the Crust
  1. Preheat your oven to 180°C (350°F) and grease or line a tart pan with parchment paper. In a bowl or food processor, combine flour, vegan butter, and sugar until crumbly. Gradually add cold water until a dough forms. Roll out or press into the prepared tart pan.
Bake the Crust
  1. Place the crust in the preheated oven and bake for 10-15 minutes until golden and firm. Allow to cool in the pan for about 10 minutes.
Make the Filling
  1. In a medium saucepan, whisk together coconut cream, sugar, lemon juice, lemon zest, cornstarch, and turmeric. Heat over medium-high for 5-10 minutes, whisking constantly until thickened.
Pour the Filling
  1. Once thickened, pour the filling into the cooled tart crust and smooth the surface evenly.
Chill to Set
  1. Cover the tart with plastic wrap or foil and refrigerate for at least 3 hours to set. For best results, chill overnight.
Decorate and Serve
  1. Before serving, let the tart sit at room temperature for 10 minutes. Optionally, top with whipped cream and fresh berries. Slice and enjoy chilled.
