Step-by-Step Instructions for Fresh Strawberry Mousse
- Begin by rinsing 1 pound of fresh strawberries under cool water. Remove the green tops and slice them in half, placing them into a mixing bowl.
- In a blender, combine the sliced strawberries with about 3 tablespoons of granulated sugar. Blend everything on high until smooth, which should take about 30 seconds. Reserve ½ cup of this puree for later use.
- Take 1 cup of heavy whipping cream and pour it into a chilled mixing bowl. Using an electric mixer, whip the cream on medium speed until stiff peaks form, which should take about 2-4 minutes.
- Gently fold the reserved strawberry puree into your whipped cream using a spatula, carefully mixing until just combined.
- To serve, take small glasses or bowls and layer ½ cup of the extra strawberry puree at the bottom. Spoon the creamy mousse on top.
- When ready to serve, add a few slices of fresh strawberries on top of each mousse serving.
