Step-by-Step Instructions

  2. Wash and chop the rhubarb into 1-inch pieces, tossing with 2 tablespoons of sugar.
  3. Beat the softened butter with the remaining sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each, then incorporate the extracts.
  5. Fold in almond flour, optional all-purpose flour, baking powder, and salt until just combined.
  6. Spread the batter evenly in the springform pan, press in the sugared rhubarb pieces.
  7. Sprinkle sliced almonds over the top, then bake for 40-45 minutes.
  8. Check doneness with a toothpick, remove and cool for 20 minutes.
  9. Dust with powdered sugar before serving.
