Ingredients
  

Crust
  • 24 pieces Golden Oreo Cookies Substitute with regular Oreos for a chocolate twist.
  • 1/2 cup Unsalted Butter, melted No substitutions recommended for structure.
Blueberry Cheesecake Layer
  • 6 oz. Berry Blue Gelatin Ensure using the berry blue variant for desired color.
  • 2/3 cup Boiling Water Use hot water for best mixing.
  • 1/2 cup Greek Yogurt, cold Can replace with sour cream.
  • 1 1/2 cups Blueberries Fresh or frozen blueberries work well.
  • 8 oz. Cream Cheese Soften beforehand for best mixing.
  • 1/2 cup Powdered Sugar Adjust to taste when blending.
  • 1 3/4 cups Whipped Cream Use stabilized whipped cream for longer firmness.
Strawberry Jello Layer
  • 6 oz. Strawberry Gelatin No substitutions, but can use fresh fruit as a topping.
  • 1 1/4 cups Boiling Water Use hot water for effective mixing.
  • 4 cups Strawberries, sliced Use firm strawberries to prevent mushiness.
Topping
  • 2 cups Additional Whipped Cream Can substitute with cool whip or aerosol whipped cream.

Method
 

Crust Preparation
  1. Crush 24 Golden Oreo cookies in a blender or food processor until fine crumbs. Melt 1/2 cup of unsalted butter and combine it with cookie crumbs. Press this mixture into the bottom of a 13 x 9-inch dish and chill for 30 minutes.
Blueberry Cheesecake Layer
  1. Dissolve 6 oz. of berry blue gelatin in 2/3 cup of boiling water, stirring until dissolved. Allow to cool. Blend 1 1/2 cups of blueberries with 1/2 cup of cold Greek yogurt until smooth. Fold in 8 oz. of cream cheese and 1/2 cup of powdered sugar, then incorporate the cooled gelatin. Pour over the crust and refrigerate for at least 2 hours.
Strawberry Jello Layer
  1. Dissolve 6 oz. of strawberry gelatin in 1 1/4 cups of boiling water. Add 4 cups of sliced strawberries and let cool slightly. Carefully pour over the set blueberry layer and refrigerate for 3-4 hours or overnight.
Final Assembly
  1. Once set, spread 2 cups of whipped cream over the top. Optionally, sprinkle extra berries or colorful sprinkles before serving. Slice into squares, serve chilled, and enjoy!

Notes
