Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 10.5 x 15.5-inch jelly roll pan with cooking spray or butter.
  2. In a large mixing bowl, combine the oil, granulated sugar, brown sugar, eggs, and vanilla extract. Blend until smooth and well incorporated, about 2-3 minutes.
  3. In a separate bowl, whisk together flour, oats, baking powder, salt, and ground cinnamon. Gradually add to the wet ingredients, stirring gently until just combined.
  4. Gently fold the shredded zucchini into the batter using a spatula, ensuring it's evenly distributed.
  5. Pour the prepared batter into the greased jelly roll pan and spread it evenly.
  6. Bake for 18-22 minutes until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Allow the bars to cool completely in the pan on a wire rack.
  8. While the bars cool, make the cream cheese frosting by beating the soft cream cheese and butter together until fluffy. Gradually add the powdered sugar and vanilla, mixing until creamy.
  9. Once the bars have cooled completely, spread the frosting evenly over the top.
