For the Crust
  • 1 cup Gluten-free all-purpose flour Substitute with regular flour if gluten isn't a concern.
  • 1/4 cup Vegan yogurt (soy preferred) Use any favorite dairy-free yogurt.
  • 1/4 cup Vegan butter or margarine Can substitute with preferred vegan butter.
  • 2 tbsp Coconut sugar Can be replaced with cane or brown sugar.
  • 1/4 cup Almond meal Alternatives include ground oats or more gluten-free flour.
For the Apple Filling
  • 3 large Apples Mix varieties like Granny Smith or Honeycrisp.
  • 1/4 cup Organic cane sugar Can swap for coconut sugar or maple syrup.
  • 2 tbsp Cornstarch Alternatives include tapioca flour or arrowroot.
  • 1 tbsp Fresh lemon juice
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Salt
For the Glaze
  • 1 tbsp Apricot jam Can mix with a little water for a lovely finish.
  • 1 tbsp Water Used to thin out the jam.

Method
 

Step-by-Step Instructions
  1. Prepare the glaze by melting apricot jam and water in a small saucepan over medium heat for about 2-3 minutes.
  2. Make the crust by blending vegan butter and yogurt in a food processor until creamy, then mix in the other crust ingredients to form a dough. Refrigerate for 30 minutes.
  3. Prepare the apple filling by slicing apples and combining them with sugar, cornstarch, lemon juice, and spices. Let sit for 10 minutes.
  4. Assemble the galette by placing the chilled crust on a parchment-lined baking sheet, adding the apple filling, and folding the edges over.
  5. Bake at 400ºF (220ºC) for 35-40 minutes until golden brown. Cover edges with foil if they darken too quickly.
  6. Cool the galette for 10 minutes before serving warm with vegan ice cream or whipped cream.
